🍕 Crispy Mini Pizzas with Pear, Gorgonzola, and Radicchio

Ingredients
- 5 thyme sprigs
- 1 rosemary sprig
- 21 g fresh yeast (0.5 cube)
- 300 g flour
- 1 tsp salt
- 3 tbsp olive oil
- 2 ripe pears
- 1 drop lemon juice
- 200 g Gorgonzola
- 250 g Gruyère cheese
- olive oil (for drizzling)
- 200 g radicchio
- 8 oregano sprigs (for garnish)
Instructions
- 1. Wash the thyme and rosemary sprigs and shake them dry.
- 2. Pluck the leaves from the thyme and the needles from the rosemary.
- 3. Finely chop the herbs.
- 4. Crumble the yeast and stir it with 50 milliliters of lukewarm water.
- 5. Put the flour, salt, and chopped herbs into a bowl.
- 6. Make a well in the center of the flour mixture.
- 7. Pour the yeast liquid into the well.
- 8. Lightly dust the surface with flour.
- 9. Let the mixture rest for 15 minutes.
- 10. Add 80 to 100 milliliters of lukewarm water.
- 11. Knead the dough until it is smooth and elastic.
- 12. Shape the dough into a ball.
- 13. Cover the bowl.
- 14. Let the dough rise in a warm place for 1 hour until it has doubled in size.
- 15. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 16. Knead the dough vigorously again after the resting period.
- 17. Work the olive oil into the dough.
- 18. Divide the dough into 8 equal pieces.
- 19. Lightly dust the work surface with flour.
- 20. Roll out each piece of dough on a floured surface to a thickness of 7 millimeters.
- 21. Place the pizza bases with some distance between them on trays lined with baking paper.
- 22. Wash the pears.
- 23. Quarter the pears.
- 24. Remove the core from the pear quarters.
- 25. Slice the pear quarters into thin slices.
- 26. Drizzle the pear slices with lemon juice.
- 27. Remove the rind from the Gorgonzola and the Gruyère.
- 28. Break the Gorgonzola into small pieces.
- 29. Grate the Gruyère finely.
- 30. Sprinkle the grated Gruyère over the pizza bases.
- 31. Top the pizzas with the pear slices.
- 32. Distribute the Gorgonzola pieces over the pizzas.
- 33. Drizzle the pizzas with a little olive oil.
- 34. Bake the pizzas in the preheated oven on the lower rack for 15 to 20 minutes.
- 35. Wash the radicchio.
- 36. Remove the outer leaves and the core from the radicchio.
- 37. Cut the remaining radicchio leaves into thin strips.
- 38. Wash the oregano and shake it dry.
- 39. Take the finished pizzas out of the oven.
- 40. Sprinkle the cut radicchio strips over the hot pizzas.
- 41. Garnish the pizzas with the oregano and serve.
