  1. 1. Wash the thyme and rosemary sprigs and shake them dry.
  2. 2. Pluck the leaves from the thyme and the needles from the rosemary.
  3. 3. Finely chop the herbs.
  4. 4. Crumble the yeast and stir it with 50 milliliters of lukewarm water.
  5. 5. Put the flour, salt, and chopped herbs into a bowl.
  6. 6. Make a well in the center of the flour mixture.
  7. 7. Pour the yeast liquid into the well.
  8. 8. Lightly dust the surface with flour.
  9. 9. Let the mixture rest for 15 minutes.
  10. 10. Add 80 to 100 milliliters of lukewarm water.
  11. 11. Knead the dough until it is smooth and elastic.
  12. 12. Shape the dough into a ball.
  13. 13. Cover the bowl.
  14. 14. Let the dough rise in a warm place for 1 hour until it has doubled in size.
  15. 15. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  16. 16. Knead the dough vigorously again after the resting period.
  17. 17. Work the olive oil into the dough.
  18. 18. Divide the dough into 8 equal pieces.
  19. 19. Lightly dust the work surface with flour.
  20. 20. Roll out each piece of dough on a floured surface to a thickness of 7 millimeters.
  21. 21. Place the pizza bases with some distance between them on trays lined with baking paper.

  24. 24. Remove the core from the pear quarters.
  25. 25. Slice the pear quarters into thin slices.

  27. 27. Remove the rind from the Gorgonzola and the Gruyère.
  28. 28. Break the Gorgonzola into small pieces.
  29. 29. Grate the Gruyère finely.
  30. 30. Sprinkle the grated Gruyère over the pizza bases.
  31. 31. Top the pizzas with the pear slices.
  32. 32. Distribute the Gorgonzola pieces over the pizzas.
  33. 33. Drizzle the pizzas with a little olive oil.
  34. 34. Bake the pizzas in the preheated oven on the lower rack for 15 to 20 minutes.

  36. 36. Remove the outer leaves and the core from the radicchio.
  37. 37. Cut the remaining radicchio leaves into thin strips.
  38. 38. Wash the oregano and shake it dry.
  39. 39. Take the finished pizzas out of the oven.
  40. 40. Sprinkle the cut radicchio strips over the hot pizzas.
  41. 41. Garnish the pizzas with the oregano and serve.
