🍕 Mini pizzas with prawns and fresh herbs

Ingredients
- 20 g yeast
- 400 g flour
- 1 tsp sugar
- 1 tsp salt
- 600 g tomatoes (fresh, ripe)
- olive oil
- 200 g grated cheese
- salt
- pepper (from the mill)
- 2 bunches herbs (mixed, to taste)
- 400 g shrimp (ready for cooking)
- 2 tbsp lemon juice
- 1 tbsp oil
Instructions
- 1. Mix flour, yeast, sugar and salt in a bowl.
- 2. Add about 250 ml of lukewarm water.
- 3. Knead the ingredients into a smooth dough.
- 4. Cover the bowl.
- 5. Let the dough rise in a warm, draft-free place for about 1 hour.
- 6. Then knead the dough briefly.
- 7. Let it rise again for 30 to 40 minutes.
- 8. Line a baking tray with baking paper.
- 9. Dust a work surface generously with flour.
- 10. Divide the dough into 12 equal balls.
- 11. Roll out each ball thinly with a rolling pin.
- 12. Place the dough rounds on the prepared tray.
- 13. Press the dough flat with your hands.
- 14. Keep the edge slightly thicker than the center.
- 15. Brush the pizzas with a little olive oil.
- 16. Wash the tomatoes thoroughly.
- 17. Remove the green stem at the top.
- 18. Slice the tomatoes into thin rounds.
- 19. Distribute the tomato slices evenly over the pizzas.
- 20. Sprinkle cheese over the tomatoes.
- 21. Preheat the oven to 220°C.
- 22. Set the oven to top and bottom heat.
- 23. Bake the pizzas for about 8 to 12 minutes.
- 24. Remove them when they are golden brown.
- 25. Fry the prawns briefly in oil.
- 26. Season the prawns with lemon juice.
- 27. Finally salt and pepper them.
- 28. Wash the herbs thoroughly.
- 29. Remove wilted or inedible leaves.
- 30. Shake the herbs dry.
- 31. Lightly salt the herbs.
- 32. Place the finished pizzas on a serving plate.
- 33. Top the pizzas with the fried prawns.
- 34. Garnish the pizzas with the fresh herbs.
- 35. Serve the mini pizzas immediately.
