🍳 Mini Panettone Muffins

Ingredients
- 125 ml milk (1.5% fat)
- 0.5 cube yeast
- 1 organic lemon
- 300 g spelt flour (Type 630)
- 75 g sugar
- 8 tbsp oil
- 2 eggs
- salt
- nutmeg
- 50 g candied lemon peel (sukkade)
- 50 g raisins
- 100 g dried cherries
- 10 g butter (2 tsp)
- 1 tbsp powdered sugar
Instructions
- 1. Gently warm the milk in a pot.
- 2. Crumble the yeast into the warm milk.
- 3. Stir the yeast into the milk until it has completely dissolved.
- 4. Wash the lemon thoroughly.
- 5. Dry the lemon with a cloth.
- 6. Grate the lemon zest finely.
- 7. Combine the lemon zest with the flour in a large mixing bowl.
- 8. Add the sugar to the bowl.
- 9. Add the oil.
- 10. Crack the eggs into the bowl.
- 11. Pour the yeast milk over the other ingredients.
- 12. Add a pinch of salt.
- 13. Grate some nutmeg directly into the bowl.
- 14. Process the ingredients using the dough hooks of a hand mixer.
- 15. Knead the dough until it is smooth.
- 16. Knead the candied lemon peel into the dough briefly.
- 17. Knead the raisins into the dough briefly.
- 18. Knead the cherries into the dough briefly.
- 19. Cover the bowl with the dough.
- 20. Place the bowl in a warm spot.
- 21. Let the dough rise for about 1 hour.
- 22. Wait until the volume of the dough has approximately doubled.
- 23. Grease 10 ovenproof molds (each 125 ml) with the butter.
- 24. Alternatively, use 10 cups of a muffin tin.
- 25. Knead the dough briefly again.
- 26. Distribute the dough onto the prepared molds.
- 27. Let the dough rise in the molds for another 15 minutes.
- 28. Preheat the oven.
- 29. Set the oven to 180 °C conventional heat.
- 30. Alternatively, set the oven to 160 °C fan-forced heat.
- 31. Alternatively, set the oven to gas mark 2.
- 32. Bake the mini panettones in the preheated oven.
- 33. Bake them for about 20 minutes.
- 34. Remove the panettones from the oven.
- 35. Let the panettones cool for 10 to 12 minutes.
- 36. Release the panettones from the molds.
- 37. Place the panettones on a cake rack.
- 38. Let the panettones cool completely.
- 39. Dust the cooled panettones with powdered sugar.
- 40. Serve the panettones.
