🍽️ Mini Skewers with Tomato, Cheese and Pesto

Ingredients
- 12 cocktail tomatoes
- 12 mini mozzarella balls
- 3 bunch basil
- 20 g pecorino
- 30 g parmesan
- 2 garlic cloves
- 1 tbsp pine nuts
- 6 tbsp olive oil
- 1 pinch salt
- 12 toothpicks
Instructions
- 1. Pick the basil leaves off the stems.
- 2. Wash the leaves under cold water.
- 3. Gently pat the leaves dry with a kitchen towel.
- 4. Grate both types of cheese finely.
- 5. Peel the garlic.
- 6. Cut the garlic into coarse pieces.
- 7. Put the basil, cheese, garlic and pine nuts into a bowl.
- 8. Get a hand blender ready.
- 9. Blend the ingredients roughly.
- 10. Add the olive oil gradually.
- 11. Continue blending until a creamy sauce forms.
- 12. Season the sauce with salt at the end.
- 13. Wash the tomatoes.
- 14. Thread one tomato and one mozzarella ball alternately onto a toothpick.
- 15. Place the finished skewers in a small baking dish.
- 16. Coat the skewers with the pesto.
- 17. Cover the dish with cling film.
- 18. Let the skewers infuse for about 60 minutes at room temperature.
