🍽️ Mini Meatball Sandwiches with Quark Dip

Ingredients
- 30 g capers (2 tbsp; jar)
- 1 onion
- 500 g ground beef
- 1 egg
- 50 g breadcrumbs (5 tbsp)
- 15 g mustard (2 tsp)
- salt
- pepper
- 1 tbsp rapeseed oil
- 4 sprigs mint
- 1 organic lemon
- 250 g buttermilk quark (or low-fat quark)
- 5 tbsp milk (1.5% fat)
- 200 g carrots (2 carrots)
- 250 g kohlrabi (1 kohlrabi)
- 500 g large flatbread (1 large flatbread)
Instructions
- 1. Drain the capers.
- 2. Chop the capers roughly.
- 3. Peel the onion.
- 4. Dice the onion finely.
- 5. Place the minced meat in a large bowl.
- 6. Add the egg to the minced meat.
- 7. Add breadcrumbs to the minced meat.
- 8. Add mustard to the minced meat.
- 9. Add the chopped capers to the minced meat.
- 10. Add the diced onions to the minced meat.
- 11. Mix the ingredients using the dough hooks of a hand mixer.
- 12. Mix until a smooth dough forms.
- 13. Season the mixture with salt.
- 14. Season the mixture with pepper.
- 15. Wet your hands with water.
- 16. Shape 24 small flat meatballs from the mixture.
- 17. Heat oil in a large non-stick pan.
- 18. Place the meatballs in the hot oil.
- 19. Fry the meatballs over medium heat.
- 20. Fry the meatballs for about 5 minutes on each side.
- 21. Let the meatballs cool on a large plate.
- 22. Wash the mint.
- 23. Shake the mint dry.
- 24. Chop the mint finely.
- 25. Rinse the lemon with hot water.
- 26. Dry the lemon.
- 27. Grate 1–2 teaspoons of lemon zest.
- 28. Place quark in a bowl.
- 29. Add milk to the quark.
- 30. Stir the quark and milk until smooth.
- 31. Add the chopped mint to the quark.
- 32. Add the lemon zest to the quark.
- 33. Season the quark dip with salt.
- 34. Season the quark dip with pepper.
- 35. Wash the carrots.
- 36. Trim the carrots.
- 37. Wash the kohlrabi.
- 38. Trim the kohlrabi.
- 39. Peel the carrots.
- 40. Peel the kohlrabi.
- 41. Grate the carrots coarsely.
- 42. Grate the kohlrabi coarsely.
- 43. Cut the flatbread into 6 pieces like a pie.
- 44. Halve each bread piece crosswise.
- 45. Spread all bread halves with the mint quark.
- 46. Distribute the grated carrots on the top bread halves.
- 47. Distribute the grated kohlrabi on the bottom bread halves.
- 48. Place 4 mini meatballs on one bread half.
- 49. Place the matching bread half on top.
- 50. Wrap the sandwich individually in cling film.
