  1. 1. Put the flour and salt into a large bowl.
  2. 2. Add the oil and about 75 milliliters of lukewarm water.
  3. 3. Knead everything into a smooth dough that no longer sticks to your fingers.
  4. 4. If the dough is crumbly, add a little more water.
  5. 5. Shape the dough into a ball.
  6. 6. Lightly coat the ball with oil.
  7. 7. Let the dough rest under a cloth for about 30 minutes.
  8. 8. Peel the apples.
  9. 9. Cut the apples into quarters and remove the core.
  10. 10. Slice the apple pieces into thin strips.
  11. 11. Melt the butter in a pot.
  12. 12. Add the apple slices, one tablespoon of sugar, and the lemon juice.
  13. 13. Simmer the mixture for 2 to 3 minutes.
  14. 14. Stir in the raisins.
  15. 15. Remove the pot from the heat.
  16. 16. Let the filling cool down completely.
  17. 17. Let the quark drain well.
  18. 18. Put the quark into a bowl.
  19. 19. Separate the eggs.
  20. 20. Take the egg yolks.
  21. 21. Whisk the egg yolks smoothly with the remaining sugar and the orange zest.

  25. 25. Preheat the oven to 180 degrees Celsius with fan setting.
  26. 26. Divide the dough into four equal parts.

  28. 28. Place the dough piece on a kitchen towel dusted with flour.
  29. 29. Stretch the dough as thinly as possible over your knuckles.

  37. 37. Place them seam-side down on a baking sheet lined with baking paper.
  38. 38. Brush them with the remaining butter.
  39. 39. Bake them for about 30 minutes until golden brown.
  40. 40. Remove the strudels from the oven.
  41. 41. Cut them in half if desired.
