🍽️ Mini Apple-Quark Rolls

Ingredients
- 150 g flour
- 1 pinch salt
- 1 tbsp vegetable oil (and oil for brushing)
- flour (for working)
- 2 apples (e.g. Boskop)
- 1 tbsp butter
- 60 g sugar
- 2 tbsp lemon juice
- 60 g raisins
- 250 g quark
- 2 eggs
- 1 untreated orange (zest)
- 1 pinch salt
- 40 g butter
- powdered sugar (for dusting)
Instructions
- 1. Put the flour and salt into a large bowl.
- 2. Add the oil and about 75 milliliters of lukewarm water.
- 3. Knead everything into a smooth dough that no longer sticks to your fingers.
- 4. If the dough is crumbly, add a little more water.
- 5. Shape the dough into a ball.
- 6. Lightly coat the ball with oil.
- 7. Let the dough rest under a cloth for about 30 minutes.
- 8. Peel the apples.
- 9. Cut the apples into quarters and remove the core.
- 10. Slice the apple pieces into thin strips.
- 11. Melt the butter in a pot.
- 12. Add the apple slices, one tablespoon of sugar, and the lemon juice.
- 13. Simmer the mixture for 2 to 3 minutes.
- 14. Stir in the raisins.
- 15. Remove the pot from the heat.
- 16. Let the filling cool down completely.
- 17. Let the quark drain well.
- 18. Put the quark into a bowl.
- 19. Separate the eggs.
- 20. Take the egg yolks.
- 21. Whisk the egg yolks smoothly with the remaining sugar and the orange zest.
- 22. Fold the cooled apple-raisin mixture into the quark mass.
- 23. Beat the egg whites with a pinch of salt until stiff.
- 24. Gently fold the egg whites into the mass to keep it airy.
- 25. Preheat the oven to 180 degrees Celsius with fan setting.
- 26. Divide the dough into four equal parts.
- 27. Roll each piece thinly.
- 28. Place the dough piece on a kitchen towel dusted with flour.
- 29. Stretch the dough as thinly as possible over your knuckles.
- 30. Cut off the thick edges.
- 31. Melt the remaining butter.
- 32. Brush the dough with the melted butter.
- 33. Spread the quark mixture on top.
- 34. Leave a narrow border free.
- 35. Roll the strudels tightly.
- 36. Press the ends well together, like wrapping a candy.
- 37. Place them seam-side down on a baking sheet lined with baking paper.
- 38. Brush them with the remaining butter.
- 39. Bake them for about 30 minutes until golden brown.
- 40. Remove the strudels from the oven.
- 41. Cut them in half if desired.
- 42. Serve them warm or cooled, dusted with powdered sugar.
