🍽️ Delicious Minestrone Soup for Beginners

Ingredients
- 2 Carrots
- 300 g Broccoli
- 3 Stalks Celery
- 2 Zucchini
- 2 tbsp Olive oil (20 ml each)
- 1 l Vegetable broth
- 300 g thick white beans (can; drained weight)
- Salt
- Pepper
- 50 g freshly grated Parmesan (37 % fat in dry matter)
Instructions
- 1. Peel the carrots and slice them into rounds.
- 2. Wash the broccoli and separate it into small florets.
- 3. Wash the celery and cut it into bite-sized pieces.
- 4. Wash the zucchini, halve it lengthwise, and cut it into small pieces.
- 5. Heat the oil in a pot.
- 6. Sauté the prepared vegetables over medium heat for 2 to 3 minutes.
- 7. Pour in the broth and bring the soup to a boil.
- 8. Drain the beans in a sieve.
- 9. Add the drained beans to the soup.
- 10. Simmer everything over low heat for about 10 minutes.
- 11. Finally, season the soup with salt and pepper.
- 12. Serve the minestrone on plates.
- 13. Garnish with grated Parmesan cheese.
