  1. 1. Finely chop the raisins, sultanas, currants, orange peel, and lemon peel.
  2. 2. Peel the apple and cut it into quarters.
  3. 3. Remove the core from the apple.
  4. 4. Dice the apple pieces finely.
  5. 5. Mix the fruit with the sugar, lemon zest, and juice.
  6. 6. Add the gingerbread spice and the brandy to the fruit mixture.
  7. 7. Cover the mixture.
  8. 8. Let the filling steep, ideally overnight.
  9. 9. Beat the butter with the sugar until creamy.
  10. 10. Stir in the flour until a smooth dough forms.
  11. 11. Wrap the dough in plastic wrap.
  12. 12. Chill the dough in the refrigerator for about 1 hour.
  13. 13. Preheat the oven to 180 degrees Celsius fan setting.
  14. 14. Take small pieces of dough.
  15. 15. Press the dough pieces into the greased cups of a muffin tin.
  16. 16. Form a rim from the dough.
  17. 17. Remove any excess dough.
  18. 18. Distribute the fruit filling onto the bases.
  19. 19. Knead the remaining dough pieces together again.
  20. 20. Roll the dough out to about 3 millimeters thin.
  21. 21. Cut out circles and stars from the dough.
  22. 22. Place the dough shapes on the filling.
  23. 23. Press the edges of the dough circles firmly.
  24. 24. Poke a hole in the center of the pies with a sharp knife.
  25. 25. Bake the pies for about 25 minutes until golden brown.
  26. 26. Remove the pies from the oven.
  27. 27. Let the pies cool in the tin.
