🍽️ Classic Mince Pies

Ingredients
- 100 g raisins
- 100 g sultanas
- 100 g currants
- 25 g orange peel
- 25 g lemon peel
- 1 tart apple (e.g. Granny Smith)
- 100 g sugar
- 1 unwaxed lemon (zest and juice)
- 0.5 tsp gingerbread spice
- 50 ml brandy
- 250 g soft butter
- 75 g sugar
- 220 g flour
- soft butter (for the baking tray)
Instructions
- 1. Finely chop the raisins, sultanas, currants, orange peel, and lemon peel.
- 2. Peel the apple and cut it into quarters.
- 3. Remove the core from the apple.
- 4. Dice the apple pieces finely.
- 5. Mix the fruit with the sugar, lemon zest, and juice.
- 6. Add the gingerbread spice and the brandy to the fruit mixture.
- 7. Cover the mixture.
- 8. Let the filling steep, ideally overnight.
- 9. Beat the butter with the sugar until creamy.
- 10. Stir in the flour until a smooth dough forms.
- 11. Wrap the dough in plastic wrap.
- 12. Chill the dough in the refrigerator for about 1 hour.
- 13. Preheat the oven to 180 degrees Celsius fan setting.
- 14. Take small pieces of dough.
- 15. Press the dough pieces into the greased cups of a muffin tin.
- 16. Form a rim from the dough.
- 17. Remove any excess dough.
- 18. Distribute the fruit filling onto the bases.
- 19. Knead the remaining dough pieces together again.
- 20. Roll the dough out to about 3 millimeters thin.
- 21. Cut out circles and stars from the dough.
- 22. Place the dough shapes on the filling.
- 23. Press the edges of the dough circles firmly.
- 24. Poke a hole in the center of the pies with a sharp knife.
- 25. Bake the pies for about 25 minutes until golden brown.
- 26. Remove the pies from the oven.
- 27. Let the pies cool in the tin.
