🍰 Sugar-Free Rice Pudding with Banana

Ingredients
- 1 ripe banana
- 500 ml unsweetened oat drink (oat milk)
- 120 g round-grain rice
- 1 tbsp white almond butter (15 g each)
- 0.5 tsp cinnamon
- 1 tsp flaxseed oil
- 2 tbsp almonds (15 g each)
Instructions
- 1. Peel the banana and place it in a bowl. Mash the fruit thoroughly with a fork until it forms a smooth puree.
- 2. Bring the oat drink to a boil in a pot. Stir in the rice and let it simmer on low heat for 25 to 30 minutes. Stir occasionally until the rice is soft and creamy.
- 3. Stir the mashed banana, almond butter, and cinnamon into the rice. Remove the pot from the heat and let it rest for 5 minutes. Mix in the flaxseed oil and divide the pudding onto plates. Finely chop the almonds and sprinkle them over the top.
