  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the tiny black seeds (the pulp) from the pod.
  3. 3. Place the pod and the seeds into a pot.
  4. 4. Pour the milk over the vanilla.
  5. 5. Add the sugar and a pinch of salt.
  6. 6. Bring the milk mixture to a boil.
  7. 7. Stir in the rice.
  8. 8. Turn off the heat.
  9. 9. Cover the pot.
  10. 10. Let the rice swell in the pot for approx. 40 minutes.
  11. 11. Remove the vanilla pod from the rice.
  12. 12. Serve the rice pudding with cinnamon sugar or fruity compote, as you like.
