🍰 Creamy Rice Pudding with a Crispy Caramel Top

Ingredients
- 450 ml Milk
- 1 pinch Salt
- 3 tbsp Sugar
- 1 Vanilla pod
- 0.5 Cinnamon stick
- 100 g Short-grain rice
- 1 tbsp Butter
- 50 ml Heavy cream
- 1 Cane sugar
Instructions
- 1. Pour the milk, a pinch of salt, and the sugar into a pot.
- 2. Slice the vanilla pod lengthwise and scrape out the seeds.
- 3. Add the vanilla seeds and the empty pod to the milk.
- 4. Add the cinnamon stick and bring the mixture to a boil.
- 5. Stir in the rice and turn the heat down to the lowest setting.
- 6. Let the rice simmer for about 30 minutes until it is soft.
- 7. Stir occasionally during this time.
- 8. Remove the pot from the heat and stir in the butter and cream.
- 9. Remove the vanilla pod and cinnamon stick from the rice.
- 10. Divide the rice pudding into oven-safe bowls.
- 11. Let the rice cool down slightly in the bowls.
- 12. Spread a layer of sugar evenly over the surface.
- 13. Use a kitchen torch to caramelize the sugar until it is golden brown.
- 14. Serve the rice pudding with red fruit compote or red berry compote, as you like.
