  2. 2. Slice the vanilla pod lengthwise and scrape out the seeds.
  3. 3. Add the vanilla seeds and the empty pod to the milk.
  4. 4. Add the cinnamon stick and bring the mixture to a boil.
  5. 5. Stir in the rice and turn the heat down to the lowest setting.
  6. 6. Let the rice simmer for about 30 minutes until it is soft.
  7. 7. Stir occasionally during this time.
  8. 8. Remove the pot from the heat and stir in the butter and cream.
  9. 9. Remove the vanilla pod and cinnamon stick from the rice.
  10. 10. Divide the rice pudding into oven-safe bowls.
  11. 11. Let the rice cool down slightly in the bowls.
  12. 12. Spread a layer of sugar evenly over the surface.
  13. 13. Use a kitchen torch to caramelize the sugar until it is golden brown.
  14. 14. Serve the rice pudding with red fruit compote or red berry compote, as you like.
