🍰 Rice Pudding with Kiwi Sauce

Ingredients
- 500 ml milk (1.5% fat)
- 125 g rice pudding rice
- 1 small kiwi
- 100 g gooseberries (1 handful)
- 1 tbsp sliced almonds
- 1 tbsp honey
Instructions
- 1. Pour the milk into a large microwave-safe bowl.
- 2. Stir the rice pudding mix into the milk.
- 3. Cover the bowl.
- 4. Cook the rice in the microwave at 600 watts for 20 minutes.
- 5. Peel the kiwi in the meantime.
- 6. Cut the kiwi into coarse cubes.
- 7. Wash the gooseberries thoroughly.
- 8. Trim the ends off the gooseberries.
- 9. Halve the gooseberries.
- 10. Place the diced kiwi and halved gooseberries into a tall container.
- 11. Puree the fruit roughly with a hand blender.
- 12. Heat a non-stick pan.
- 13. Toast the sliced almonds in the pan until golden brown.
- 14. Stir the honey into the cooked rice pudding.
- 15. Sprinkle the warm or cold rice pudding with the toasted almond slices.
- 16. Serve the rice pudding alongside the kiwi sauce.
