  1. 1. Put the milk, a pinch of salt, the butter, the lemon zest, the vanilla sugar, and the whole cane sugar into a pot.
  2. 2. Heat the mixture while stirring occasionally until it boils.
  3. 3. Add the rice pudding rice to the boiling milk and stir briefly until it boils again.
  4. 4. Reduce the heat to low, cover the pot, and let the rice simmer for 40 to 45 minutes.
  5. 5. Wash the apples and dry them.
  6. 6. Peel the apples and cut them into quarters.
  7. 7. Remove the core from each apple quarter.
  8. 8. Grate the apple pieces finely.
  9. 9. Stir the grated apples into the rice when there are about 5 minutes of cooking time left.
  10. 10. Fill the finished rice pudding into small bowls.
  11. 11. Sprinkle each portion with cinnamon sugar.
