  1. 1. Add the milk, a pinch of salt, the butter, the lemon zest, the vanilla sugar, and the whole cane sugar to a pot.
  2. 2. Heat the mixture while stirring occasionally until it boils.
  3. 3. Add the rice pudding rice to the boiling milk and stir briefly until it comes to a boil again.
  4. 4. Reduce the heat to low, cover the pot, and let the rice simmer for 40 to 45 minutes.
  5. 5. Wash the apples, dry them, peel them, and cut them into quarters.
  6. 6. Remove the core from the apple quarters.
  7. 7. Grate the apples finely.
  8. 8. Stir the grated apples into the rice when there are about 5 minutes of cooking time left.
  9. 9. Fill the finished rice pudding into small bowls.
  10. 10. Sprinkle the rice pudding with cinnamon sugar before serving.
