🍽️ Steamed Mussels with Lemon and Dill

Ingredients
- 2 kg mussels
- 1 clove garlic
- 1 onion
- 4 sprigs parsley
- 4 sprigs dill
- 2 tbsp olive oil
- 150 ml dry white wine
- sea salt
- pepper
- 2 organic lemons
Instructions
- 1. Rinse the mussels thoroughly under running water.
- 2. Remove the beard fibers from the shells.
- 3. Discard any mussels that are already open.
- 4. Peel the garlic clove and the onion.
- 5. Dice the garlic and onion finely.
- 6. Wash the parsley and the dill.
- 7. Shake the herbs dry.
- 8. Set aside some fresh herb leaves for decoration.
- 9. Finely chop the remaining dill and parsley.
- 10. Heat the oil in a large pot.
- 11. Sauté the garlic and onion until translucent over medium heat.
- 12. Deglaze the mixture with white wine.
- 13. Season the liquid with salt and pepper.
- 14. Stir in the chopped herbs.
- 15. Add the mussels to the broth.
- 16. Cover the pot.
- 17. Steam the mussels for about 6 minutes.
- 18. Remove the pot from the heat as soon as the shells have opened.
- 19. Discard any mussels that remain closed after cooking.
- 20. Rinse the lemon under hot water.
- 21. Dry the lemon with a cloth.
- 22. Cut the lemon into wedges.
- 23. Divide the mussels and the sauce among four plates.
- 24. Garnish the dish with the reserved herbs.
- 25. Serve the lemon wedges on the side.
