  1. 1. Rinse the mussels thoroughly under running water.
  2. 2. Remove the beard fibers from the shells.
  3. 3. Discard any mussels that are already open.
  4. 4. Peel the garlic clove and the onion.
  5. 5. Dice the garlic and onion finely.
  6. 6. Wash the parsley and the dill.
  7. 7. Shake the herbs dry.
  8. 8. Set aside some fresh herb leaves for decoration.
  9. 9. Finely chop the remaining dill and parsley.
  10. 10. Heat the oil in a large pot.
  11. 11. Sauté the garlic and onion until translucent over medium heat.
  12. 12. Deglaze the mixture with white wine.
  13. 13. Season the liquid with salt and pepper.
  14. 14. Stir in the chopped herbs.
  15. 15. Add the mussels to the broth.
  16. 16. Cover the pot.
  17. 17. Steam the mussels for about 6 minutes.
  18. 18. Remove the pot from the heat as soon as the shells have opened.
  19. 19. Discard any mussels that remain closed after cooking.
  20. 20. Rinse the lemon under hot water.
  21. 21. Dry the lemon with a cloth.
  22. 22. Cut the lemon into wedges.
  23. 23. Divide the mussels and the sauce among four plates.
  24. 24. Garnish the dish with the reserved herbs.
  25. 25. Serve the lemon wedges on the side.
