🍽️ Mussels with Tomatoes

Ingredients
- 2 kg mussels
- 1 onion
- 2 garlic cloves
- 4 small spring onions
- 2 small carrots
- 300 g tomatoes
- 0.5 bunch parsley
- 0.5 bunch basil
- 1 tsp green pickled peppercorns
- 3 tbsp olive oil
- 200 ml white wine
- black pepper (from the mill)
Instructions
- 1. Thoroughly wash the mussels under running water.
- 2. Remove the beard fibers from the mussels.
- 3. Check each mussel: Discard any open mussels.
- 4. Peel the onion and garlic and chop them finely.
- 5. Clean the spring onions, wash them, and slice them into thin rings.
- 6. Peel the carrots, wash them, and cut them into small cubes.
- 7. Blanch the tomatoes with boiling water.
- 8. Peel the skin off the tomatoes and remove the stem bases.
- 9. Cut the tomatoes into small cubes.
- 10. Wash the herbs and shake them dry.
- 11. Finely chop the herbs.
- 12. Heat the olive oil in a large pot.
- 13. Sauté the onion and garlic cubes, the spring onion rings, and the carrots briefly.
- 14. Add the tomatoes and the wine.
- 15. Cook the mixture while stirring for 3 minutes.
- 16. Add the mussels, the herbs, and the peppercorns.
- 17. Cook the mussels covered for about 10 minutes.
- 18. Remove the pan from the heat once all mussels have opened.
- 19. Sprinkle ground pepper over the finished mussels.
- 20. Serve the dish.
