  1. 1. Thoroughly wash the mussels under running water.
  2. 2. Remove the beard fibers from the mussels.
  3. 3. Check each mussel: Discard any open mussels.
  4. 4. Peel the onion and garlic and chop them finely.
  5. 5. Clean the spring onions, wash them, and slice them into thin rings.
  6. 6. Peel the carrots, wash them, and cut them into small cubes.
  7. 7. Blanch the tomatoes with boiling water.
  8. 8. Peel the skin off the tomatoes and remove the stem bases.
  9. 9. Cut the tomatoes into small cubes.
  10. 10. Wash the herbs and shake them dry.
  11. 11. Finely chop the herbs.
  12. 12. Heat the olive oil in a large pot.
  13. 13. Sauté the onion and garlic cubes, the spring onion rings, and the carrots briefly.
  14. 14. Add the tomatoes and the wine.
  15. 15. Cook the mixture while stirring for 3 minutes.
  16. 16. Add the mussels, the herbs, and the peppercorns.
  17. 17. Cook the mussels covered for about 10 minutes.
  18. 18. Remove the pan from the heat once all mussels have opened.
  19. 19. Sprinkle ground pepper over the finished mussels.
  20. 20. Serve the dish.
