🍽️ Mussel with spicy sausage (Chorizo)

Ingredients
- 2 kg mussels
- 150 g chorizo
- 1 garlic clove
- 1 onion
- 2 tbsp olive oil
- 150 ml dry white wine
- sea salt
- pepper (from the mill)
- parsley (for garnishing)
- lemon wedges (for serving)
Instructions
- 1. Rinse the mussels thoroughly under running water.
- 2. Remove the beard (the fibrous fibers) from the mussels.
- 3. Discard any mussels that are already open.
- 4. Cut the chorizo sausage into small cubes.
- 5. Peel the garlic clove and the onion.
- 6. Finely dice the garlic and the onion.
- 7. Heat oil in a large pot.
- 8. Add the chorizo cubes, garlic, and onion to the hot oil.
- 9. Sauté the ingredients for 1 to 2 minutes.
- 10. Deglaze the mixture with white wine.
- 11. Season with salt and pepper.
- 12. Add the mussels to the broth.
- 13. Cover the pot.
- 14. Steam the mussels for approx. 6 minutes.
- 15. Remove the pot from the heat when the mussels have opened.
- 16. Discard any mussels that remain closed after cooking.
- 17. Distribute the mussels and broth onto plates.
- 18. Garnish the dishes with fresh parsley leaves.
- 19. Serve the mussels with lemon wedges for squeezing.
