  1. 1. Rinse the mussels thoroughly under running water.
  2. 2. Remove the beard (the fibrous fibers) from the mussels.
  3. 3. Discard any mussels that are already open.
  4. 4. Cut the chorizo sausage into small cubes.
  5. 5. Peel the garlic clove and the onion.
  6. 6. Finely dice the garlic and the onion.
  7. 7. Heat oil in a large pot.
  8. 8. Add the chorizo cubes, garlic, and onion to the hot oil.
  9. 9. Sauté the ingredients for 1 to 2 minutes.
  10. 10. Deglaze the mixture with white wine.
  11. 11. Season with salt and pepper.
  12. 12. Add the mussels to the broth.
  13. 13. Cover the pot.
  14. 14. Steam the mussels for approx. 6 minutes.
  15. 15. Remove the pot from the heat when the mussels have opened.
  16. 16. Discard any mussels that remain closed after cooking.
  17. 17. Distribute the mussels and broth onto plates.
  18. 18. Garnish the dishes with fresh parsley leaves.
  19. 19. Serve the mussels with lemon wedges for squeezing.
