🍽️ Crispy French Fries with Fresh Mussels

Ingredients
- 750 g potatoes
- 1.2 l oil
- salt
- oil (for frying)
- 2 kg mussels
- 1 onion
- 125 g carrots
- 1 tsp butter
- 250 ml dry white wine
- salt
- pepper from the mill
Instructions
- 1. Peel the potatoes.
- 2. Cut them into sticks about 6 centimeters long.
- 3. Rinse the sticks under running water.
- 4. Dry them thoroughly with a kitchen towel.
- 5. Heat the oil in a pot to 175 degrees Celsius.
- 6. Fry half of the potato sticks for about 4 minutes as a pre-fry.
- 7. Remove the sticks from the oil and repeat the process with the remaining half.
- 8. Wash the mussels thoroughly under running water.
- 9. Remove the beard fibers (beards) from the mussels.
- 10. Discard any mussels that are already open.
- 11. Peel the onions.
- 12. Finely chop the onions.
- 13. Peel the carrots.
- 14. Cut the carrots into thin sticks.
- 15. Melt the butter in a large pot.
- 16. Sauté the onions in the butter.
- 17. Add the carrots and sauté them as well.
- 18. Pour 250 milliliters of water into the pot.
- 19. Add the wine.
- 20. Season the liquid with salt and pepper.
- 21. Bring the mixture to a boil.
- 22. Add the mussels to the pot.
- 23. Cook the mussels over high heat for about 8 minutes with the lid on.
- 24. Shake the pot vigorously occasionally.
- 25. Heat the frying oil to 190 degrees Celsius.
- 26. Fry the par-fried French fries in it for a few minutes until golden brown and crispy.
- 27. Remove the fries from the oil and place them in a bowl.
- 28. Season the fries with salt.
- 29. Let the mussels drain.
- 30. Serve the French fries with the drained mussels.
