🍽️ Herb-Stuffed Mussels with Cheese Crust

Ingredients
- 1.2 kg fresh mussels
- Sea salt
- 2 garlic cloves
- 7 tbsp olive oil
- 1 bunch flat-leaf parsley
- 100 g breadcrumbs
- 1 tsp lemon zest
- 50 g grated Pecorino (or Parmesan)
- Pepper (from the mill)
- Salt
Instructions
- 1. Clean the mussels thoroughly under running water and remove any beards.
- 2. Place the mussels in a large pot and cover them with water.
- 3. Bring the water to a boil over high heat, cover the pot, and cook the mussels until they open.
- 4. Discard any mussels that did not open, as they may be spoiled.
- 5. Spread a layer of coarse salt about one centimeter thick onto a baking sheet.
- 6. Separate the mussel halves and place the halves containing the cooked meat onto the salt bed.
- 7. Preheat the oven grill.
- 8. Sauté the chopped garlic briefly in hot oil.
- 9. Mix the parsley, breadcrumbs, lemon zest, and Pecorino cheese with the garlic.
- 10. Season the mixture with pepper and a small amount of salt.
- 11. Place some of the breadcrumb-cheese mixture on each mussel half and press it down lightly.
- 12. Place the mussels under the preheated grill and bake for about five minutes until golden brown.
- 13. Place some coarse salt on a serving plate.
- 14. Arrange the gratinated mussels on the salt.
- 15. Serve the mussels immediately.
