🍽️ Mussels with Herbs

Ingredients
- 4 tbsp parsley
- 4 tbsp basil
- 4 tbsp lemon balm
- 3 garlic cloves
- 125 ml lemon juice
- 250 ml fish stock (jar)
- 5 tbsp olive oil (extra virgin)
- 1 kg mussels
- salt
- pepper (from the mill)
- 2 lemon slices
Instructions
- 1. Peel the garlic clove and chop it very finely.
- 2. Rinse the mussels thoroughly and scrub them clean.
- 3. Discard any mussels that are already open before cooking.
- 4. Heat 4 tablespoons of olive oil in a pot.
- 5. Sauté the chopped garlic in the oil until fragrant, but do not let it change color.
- 6. Add the mussels and 100 milliliters of fish stock to the pot.
- 7. Steam the mussels with the lid closed for about 3 minutes.
- 8. Remove the pot from the heat as soon as all mussels are wide open.
- 9. Remove any mussels that remain closed after cooking.
- 10. Pour the remaining fish stock and lemon juice into the pot.
- 11. Let the mussels cook over low heat for another 4 minutes.
- 12. Divide the mussels between two pre-warmed bowls.
- 13. Strain the cooking liquid through a fine sieve to remove any sand residue.
- 14. Pour the filtered liquid over the mussels.
- 15. Add the fresh herbs and a splash of cold olive oil.
- 16. Grind fresh pepper over the dish.
- 17. Season to taste with salt.
- 18. Garnish each bowl with a lemon slice.
- 19. Serve the mussels hot with white bread.
