  1. 1. Peel the garlic clove and chop it very finely.
  2. 2. Rinse the mussels thoroughly and scrub them clean.
  3. 3. Discard any mussels that are already open before cooking.
  4. 4. Heat 4 tablespoons of olive oil in a pot.
  5. 5. Sauté the chopped garlic in the oil until fragrant, but do not let it change color.
  6. 6. Add the mussels and 100 milliliters of fish stock to the pot.
  7. 7. Steam the mussels with the lid closed for about 3 minutes.
  8. 8. Remove the pot from the heat as soon as all mussels are wide open.
  9. 9. Remove any mussels that remain closed after cooking.
  10. 10. Pour the remaining fish stock and lemon juice into the pot.
  11. 11. Let the mussels cook over low heat for another 4 minutes.
  12. 12. Divide the mussels between two pre-warmed bowls.
  13. 13. Strain the cooking liquid through a fine sieve to remove any sand residue.
  14. 14. Pour the filtered liquid over the mussels.
  15. 15. Add the fresh herbs and a splash of cold olive oil.
  16. 16. Grind fresh pepper over the dish.
  17. 17. Season to taste with salt.
  18. 18. Garnish each bowl with a lemon slice.
  19. 19. Serve the mussels hot with white bread.
