🍽️ Mussels in Marinade

Ingredients
- 3.5 kg mussels
- 3 tbsp olive oil
- 4 onions
- 1 bunch chives
- 2 tbsp butter
- 350 ml dry white wine
- 200 ml fish stock
- salt
- pepper
- lemon juice
Instructions
- 1. Discard any mussels that are already open, as they may no longer be fresh.
- 2. Thoroughly rinse the remaining mussels under running water and scrub them clean.
- 3. Remove the beards (the fibrous strands) from the mussel shells.
- 4. Peel the onions and slice them into thin strips.
- 5. Wash the chives and shake them dry.
- 6. Heat olive oil in a large pot and soften the onion strips in it.
- 7. Pour the fish stock, 150 milliliters of water, and the wine over the onions.
- 8. Season the liquid with salt and pepper and bring it to a boil.
- 9. Add the mussels to the pot and cover with the lid.
- 10. Cook the mussels over high heat for about 8 minutes.
- 11. Shake the pot vigorously from time to time while cooking.
- 12. Remove all mussels that have opened from the pot.
- 13. Cut half of the chives into small rings.
- 14. Set aside half of the chives for garnish.
- 15. Stir the remaining chive rings into the mussels.
- 16. Finish the mussels with a squeeze of lemon juice.
- 17. Serve the mussels garnished with the remaining chives.
