Ingredients
- 100 g glass noodles
- 1.25 kg mussels
- 40 g ginger (1 piece)
- 4 lime leaves
- 100 g small carrots (2 small carrots)
- 200 g leek (1 stalk)
- 2 stalks lemongrass
- 0.5 bunch lemon balm
- salt
- pepper
- 1 egg white
- 250 ml coconut milk (9 % fat)
Instructions
- 1. Pour the glass noodles into a bowl with hot water.
- 2. Let the noodles soak for 15 minutes.
- 3. Wash the mussels thoroughly under running water.
- 4. Remove the beards from the mussels.
- 5. Discard any mussels that are already open.
- 6. Drain the soaked noodles in a colander.
- 7. Let the noodles drain well.
- 8. Cut the noodles into smaller pieces using kitchen scissors.
- 9. Peel the ginger.
- 10. Cut the ginger into very fine strips.
- 11. Wash the lime leaves.
- 12. Cut the lime leaves into very fine strips as well.
- 13. Peel the carrots.
- 14. Clean the leek.
- 15. Wash the leek.
- 16. Cut the carrots into fine strips.
- 17. Cut the white part of the leek into fine strips.
- 18. Halve the lemongrass lengthwise.
- 19. Mix the mussels with the ginger and lime leaves.
- 20. Add the cut vegetables to the mixture.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Wash the lemon balm.
- 24. Shake the lemon balm dry.
- 25. Pluck the leaves from the lemon balm.
- 26. Stack eight large sheets of baking paper on top of each other.
- 27. Cut circles with a diameter of 40 cm from the paper.
- 28. Place two sheets of baking paper on top of each other.
- 29. Place a piece of lemongrass on the paper.
- 30. Place a quarter of the noodles and mussel mixture on the paper.
- 31. Separate an egg into yolk and white.
- 32. Pour a quarter of the coconut milk over the mussels.
- 33. Sprinkle a quarter of the lemon balm over the mussels.
- 34. Brush the edge of the paper with some egg white.
- 35. Fold the paper over the mussels.
- 36. Seal the package by folding the edge.
- 37. Place the mussel packet on a baking sheet.
- 38. Repeat the process with the remaining ingredients and paper.
- 39. Moisten the surface of the packets with a little water.
- 40. Preheat the oven to 225 °C (fan: 200 °C, gas: setting 3-4).
- 41. Bake the packets for 15 to 20 minutes in the preheated oven.
