  17. 17. Cut the white part of the leek into fine strips.
  18. 18. Halve the lemongrass lengthwise.
  19. 19. Mix the mussels with the ginger and lime leaves.

  40. 40. Preheat the oven to 225 °C (fan: 200 °C, gas: setting 3-4).
  41. 41. Bake the packets for 15 to 20 minutes in the preheated oven.
