🍽️ Classic Mussels with White Wine

Ingredients
- 2 kg mussels
- 2 shallots
- 2 garlic cloves
- 2 tbsp olive oil
- 200 ml dry white wine
- 100 ml fish stock
- salt
- pepper (from the mill)
- 2 tbsp lemon juice
- 3 tbsp parsley
Instructions
- 1. Thoroughly rinse the mussels under running water.
- 2. Pull off the tough beards (fibrous strands) from the mussels.
- 3. Discard any mussels that are already open.
- 4. Peel the shallots and the garlic.
- 5. Slice the shallots into thin, narrow rings.
- 6. Finely chop the garlic.
- 7. Heat the oil in a large pot.
- 8. Add the garlic and shallots to the hot oil.
- 9. Sauté the vegetables until they are soft and translucent.
- 10. Add the cleaned mussels to the pot.
- 11. Pour in the white wine and the fish or vegetable broth.
- 12. Season the liquid with salt and pepper.
- 13. Place the lid on the pot.
- 14. Cook the mussels over medium heat for about 5 minutes.
- 15. Remove the mussels from the pot and place them on plates.
- 16. Discard any mussels that remain closed after cooking.
- 17. Add a splash of lemon juice to the cooking liquid.
- 18. Pour the sauce over the mussels.
- 19. Sprinkle the dish with fresh parsley.
- 20. Serve the mussels immediately while hot.
