  1. 1. Rinse the mussels under running water.
  2. 2. Pull off the beards from the mussels.
  3. 3. Peel two shallots.
  4. 4. Dice the shallots into very small cubes.
  5. 5. Place the shallots, wine, thyme, and garlic in a pot.
  6. 6. Heat the mixture in the pot.
  7. 7. Add the mussels to the pot.
  8. 8. Cover the pot with a lid.
  9. 9. Cook the mussels for about 5 minutes.
  10. 10. Shake the pot occasionally in between.
  11. 11. Remove the mussels from the pot as soon as all shells have opened.
  12. 12. Extract the mussel meat from the shells.
  13. 13. Place the meat into 12 mussel halves.
  14. 14. Arrange the mussels on a platter.
  15. 15. Pour boiling water over the tomatoes briefly.
  16. 16. Shock the tomatoes immediately in cold water.
  17. 17. Peel the tomatoes.
  18. 18. Quarter the tomatoes.
  19. 19. Remove the core of the tomatoes.
  20. 20. Dice the tomatoes very finely.
  21. 21. Peel the remaining shallot.
  22. 22. Dice the shallot very finely as well.
  23. 23. Mix the tomatoes and shallots with chives.
  24. 24. Place vinegar, salt, pepper, and oil in a separate bowl.
  25. 25. Whisk the ingredients in the bowl.
  26. 26. Stir the dressing mixture into the tomatoes.
  27. 27. Distribute the dressing over the arranged mussels.
