🍽️ Mussels with Tomato Dressing

Ingredients
- 12 large mussels
- 2 shallots
- 100 ml dry white wine
- 1 sprig of thyme
- 1 clove of garlic
- 1 beefsteak tomato
- 3 shallots
- 2 tbsp chive rings
- 1 tbsp red wine vinegar
- 1 tsp balsamic vinegar
- salt
- pepper (from the mill)
- 3 tbsp olive oil
Instructions
- 1. Rinse the mussels under running water.
- 2. Pull off the beards from the mussels.
- 3. Peel two shallots.
- 4. Dice the shallots into very small cubes.
- 5. Place the shallots, wine, thyme, and garlic in a pot.
- 6. Heat the mixture in the pot.
- 7. Add the mussels to the pot.
- 8. Cover the pot with a lid.
- 9. Cook the mussels for about 5 minutes.
- 10. Shake the pot occasionally in between.
- 11. Remove the mussels from the pot as soon as all shells have opened.
- 12. Extract the mussel meat from the shells.
- 13. Place the meat into 12 mussel halves.
- 14. Arrange the mussels on a platter.
- 15. Pour boiling water over the tomatoes briefly.
- 16. Shock the tomatoes immediately in cold water.
- 17. Peel the tomatoes.
- 18. Quarter the tomatoes.
- 19. Remove the core of the tomatoes.
- 20. Dice the tomatoes very finely.
- 21. Peel the remaining shallot.
- 22. Dice the shallot very finely as well.
- 23. Mix the tomatoes and shallots with chives.
- 24. Place vinegar, salt, pepper, and oil in a separate bowl.
- 25. Whisk the ingredients in the bowl.
- 26. Stir the dressing mixture into the tomatoes.
- 27. Distribute the dressing over the arranged mussels.
