🍽️ Mexican-style vegetable tortilla

Ingredients
- 1 green bell pepper
- 1 onion
- 1 small can corn
- 2 red chili peppers
- 4 tbsp oil
- 4 eggs
- 50 ml milk
- 80 g flour
- 1 tbsp butter
- salt
- pepper
- 4 sprigs thyme
Instructions
- 1. Cut the peppers in half and remove the seeds.
- 2. Rinse the peppers under running water.
- 3. Cut the peppers into thin strips.
- 4. Peel the onion.
- 5. Cut the onion into fine cubes.
- 6. Drain the corn in a sieve.
- 7. Heat the oil in an ovenproof pan.
- 8. Sauté the onion cubes briefly.
- 9. Add the chili peppers and pepper strips to the pan.
- 10. Fry the vegetables together.
- 11. Stir the corn into the vegetables.
- 12. Whisk the eggs with the milk in a bowl.
- 13. Fold the flour into the egg and milk mixture.
- 14. Stir until a smooth mixture forms.
- 15. Pour the egg mixture over the vegetables in the pan.
- 16. Season the dish with salt and pepper.
- 17. Fry the whole thing for a few minutes on the stove.
- 18. Push the butter to the edge of the pan.
- 19. Let the butter melt there.
- 20. Place the pan in the preheated oven.
- 21. Brown the surface at 200 degrees.
- 22. Sprinkle the finished dish with thyme leaves.
