🍽️ Kale with Mettwurst

Ingredients
- 1.5 kg fresh kale
- salt
- 3 onions
- 40 g ghee
- 4 raw Mettwurst sausages
- 400 ml meat broth
- 2 tbsp oat flakes
- pepper (from the mill)
- nutmeg (freshly grated)
- 0.5 tsp coarsely crushed allspice
Instructions
- 1. Break the leaves off the kale stem and cut off the thick central ribs.
- 2. Wash the leaves thoroughly under running water.
- 3. Put the kale in a pot with plenty of boiling salted water and cook it for 5 minutes (this is called blanching).
- 4. Drain the kale and rinse it immediately with cold water to stop the cooking process.
- 5. Let the kale drain well and then chop it finely.
- 6. Peel the onions and cut them into small cubes.
- 7. Heat the ghee in a pan and sauté the onions until translucent.
- 8. Break the Mettwurst into large pieces and prick them several times with a toothpick.
- 9. Add the sausage and the chopped kale to the onion mixture in the pan.
- 10. Pour in hot meat broth and let everything simmer covered for 30 minutes over low heat.
- 11. Remove the sausage pieces from the pan and set them aside.
- 12. Continue to cook the kale covered for 1 to 1.5 hours until it is tender.
- 13. Stir the oatmeal into the finished kale to thicken the sauce slightly.
- 14. Add the Mettwurst back to the pan and warm it through briefly.
- 15. Season the dish to taste with salt, pepper, nutmeg, and allspice.
