  1. 1. Break the leaves off the kale stem and cut off the thick central ribs.
  2. 2. Wash the leaves thoroughly under running water.
  3. 3. Put the kale in a pot with plenty of boiling salted water and cook it for 5 minutes (this is called blanching).
  4. 4. Drain the kale and rinse it immediately with cold water to stop the cooking process.
  5. 5. Let the kale drain well and then chop it finely.
  6. 6. Peel the onions and cut them into small cubes.
  7. 7. Heat the ghee in a pan and sauté the onions until translucent.
  8. 8. Break the Mettwurst into large pieces and prick them several times with a toothpick.
  9. 9. Add the sausage and the chopped kale to the onion mixture in the pan.
  10. 10. Pour in hot meat broth and let everything simmer covered for 30 minutes over low heat.
  11. 11. Remove the sausage pieces from the pan and set them aside.
  12. 12. Continue to cook the kale covered for 1 to 1.5 hours until it is tender.
  13. 13. Stir the oatmeal into the finished kale to thicken the sauce slightly.
  14. 14. Add the Mettwurst back to the pan and warm it through briefly.
  15. 15. Season the dish to taste with salt, pepper, nutmeg, and allspice.
