🍽️ Refreshing Melon Soup with Shrimp

Ingredients
- 1 Galia melon
- 16 shrimp
- 1 shallot
- 1 tbsp butter
- 250 ml fish stock (jar)
- salt
- pepper (from the mill)
- 1 tbsp lemon juice
- mint (for garnishing)
Instructions
- 1. Cut the melons in half and remove the seeds.
- 2. Peel three of the melon halves and cut the flesh into small cubes.
- 3. Puree the cubed melon until smooth.
- 4. Use a melon baller to scoop out balls from the remaining melon half.
- 5. Store the melon balls in the refrigerator, covered.
- 6. Peel the shrimp but leave the tail fins on.
- 7. Make a lengthwise cut along the back of each shrimp.
- 8. Carefully remove the black vein.
- 9. Rinse the shrimp and pat them dry with a kitchen towel.
- 10. Peel the shallot and chop it finely.
- 11. Heat butter in a pan and sauté the shallots until translucent.
- 12. Deglaze the shallots with the stock and bring the mixture to a boil.
- 13. Reduce the heat and add the shrimp to the pan.
- 14. Cook the shrimp over low heat for about 3 minutes.
- 15. Remove the shrimp from the pan and set them aside.
- 16. Pour the cold melon soup into serving bowls.
- 17. Top the soup with the shrimp and melon balls.
- 18. Garnish the dish with fresh mint leaves.
