  1. 1. Cut the melon in half and carefully remove the flesh. Make sure to remove all seeds. Dice the flesh into small cubes and then puree it together with the lemon juice and powdered sugar until smooth.
  2. 2. Whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the melon mixture. Stir everything well, pour the mixture into a wide metal bowl, and freeze it in the ice cream maker for about 4 hours.
