  2. 2. Cut the melon in half and remove the seeds with a spoon.
  3. 3. Slice the green or yellow rind off the flesh.
  4. 4. Cut the flesh into thin wedges and arrange them on the plates.
  5. 5. Rinse the shrimp and let them drain well.
  6. 6. Whisk together raspberry vinegar, lemon juice, honey, cayenne pepper, and salt in a small bowl to make a dressing.
  7. 7. Stir the mint into the dressing and add the shrimp.
  8. 8. Distribute the shrimp-mint mixture over the melon wedges.
  9. 9. Cut the feta into small cubes or crumble it with your fingers.
  10. 10. Sprinkle the feta over the finished salad.
