🍽️ Melon Salad with Shrimp

Ingredients
- 0.5 handful mint (Morocco)
- 1 large net melon
- 200 g shrimp (precooked, peeled and deveined)
- 1 tbsp raspberry vinegar
- 2 tbsp lemon juice
- 1 tsp honey
- 1 pinch cayenne pepper
- sea salt
- 150 g feta
Instructions
- 1. Rinse the mint under cold water and shake it dry.
- 2. Cut the melon in half and remove the seeds with a spoon.
- 3. Slice the green or yellow rind off the flesh.
- 4. Cut the flesh into thin wedges and arrange them on the plates.
- 5. Rinse the shrimp and let them drain well.
- 6. Whisk together raspberry vinegar, lemon juice, honey, cayenne pepper, and salt in a small bowl to make a dressing.
- 7. Stir the mint into the dressing and add the shrimp.
- 8. Distribute the shrimp-mint mixture over the melon wedges.
- 9. Cut the feta into small cubes or crumble it with your fingers.
- 10. Sprinkle the feta over the finished salad.
