  5. 5. Cut each melon wedge in half once.
  6. 6. Arrange the melon pieces on four plates.
  7. 7. Rinse the lemon and orange under hot water.
  8. 8. Grate the zest thinly from both fruits.
  9. 9. Squeeze the juice from both fruits.
  10. 10. Whisk the juice together with the lemon and orange zest.
  11. 11. Add the oil.
  12. 12. Season with a pinch of salt.
  13. 13. Season with a pinch of sugar.
  14. 14. Taste the dressing and adjust if needed.
  15. 15. Rinse the herbs under running water.
  16. 16. Shake the herbs dry.
  17. 17. Pluck the leaves off the stems.
