🍽️ Melon Salad with Ham

Ingredients
- 1 large honeydew melon (e.g. Galia or honeydew melon)
- 0.5 unwaxed lemon
- 0.5 unwaxed orange
- 4 tbsp olive oil
- coarse salt
- pepper (from the mill)
- sugar
- 1 handful fresh herbs (e.g. mint, parsley, chervil)
- 300 g raw ham (in paper-thin slices, e.g. San Daniele)
Instructions
- 1. Cut the melon in half.
- 2. Scoop out the seeds with a spoon.
- 3. Cut the melon into wedges.
- 4. Carefully cut the flesh away from the rind.
- 5. Cut each melon wedge in half once.
- 6. Arrange the melon pieces on four plates.
- 7. Rinse the lemon and orange under hot water.
- 8. Grate the zest thinly from both fruits.
- 9. Squeeze the juice from both fruits.
- 10. Whisk the juice together with the lemon and orange zest.
- 11. Add the oil.
- 12. Season with a pinch of salt.
- 13. Season with a pinch of sugar.
- 14. Taste the dressing and adjust if needed.
- 15. Rinse the herbs under running water.
- 16. Shake the herbs dry.
- 17. Pluck the leaves off the stems.
- 18. Drape the ham over the melons.
- 19. Drizzle the salad with the dressing.
- 20. Sprinkle the herbs over the top.
- 21. Serve the salad.
