🍽️ Fresh Melon and Mozzarella Salad

Ingredients
- 300 g watermelon flesh
- 1 cucumber
- 1 avocado
- 1 red onion
- 100 g arugula
- 125 g mozzarella balls
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- salt
- pepper
- 2 tbsp pistachio kernels (à 15 g)
Instructions
- 1. Cut the watermelon into large cubes.
- 2. Peel and wash the cucumber.
- 3. Cut the cucumber into small pieces.
- 4. Cut the avocado in half.
- 5. Remove the pit of the avocado.
- 6. Scoop out the flesh of the avocado.
- 7. Dice the avocado flesh into small cubes.
- 8. Peel the onion.
- 9. Slice the onion into thin rings.
- 10. Wash the arugula.
- 11. Pick out any bad leaves from the arugula.
- 12. Shake the arugula dry.
- 13. Drain the mozzarella balls.
- 14. Cut the mozzarella balls in half.
- 15. Add all the prepared ingredients to a large salad bowl.
- 16. Whisk together the olive oil, balsamic vinegar, and honey to make the dressing.
- 17. Season the dressing mixture with salt and pepper to taste.
- 18. Toss the salad thoroughly with the dressing.
- 19. Sprinkle the pistachios over the melon salad.
- 20. Serve the salad immediately.
