  6. 6. Slice the onion into thin rings.
  7. 7. Wash the celery thoroughly.
  8. 8. Remove the tough fibers and ends from the celery.
  9. 9. Slice the celery into thin rounds.
  10. 10. Set aside the green celery leaves for later.
  11. 11. Peel the blood oranges.
  12. 12. Make sure to remove all the white pith.
  13. 13. Carefully cut out the fruit segments between the membranes.
  14. 14. Catch the dripping orange juice in a bowl.
  15. 15. Chop the orange fillets into small pieces.
  16. 16. Wash the tarragon.
  17. 17. Shake the herb dry.
  18. 18. Pluck the tarragon leaves from the stems.
  19. 19. Roughly chop the tarragon leaves.
  20. 20. Roughly chop the saved celery greens as well.
  21. 21. Whisk the collected orange juice with the olive oil.
