🥗 Melon salad with smoked trout

Ingredients
- 300 g smoked trout fillet
- 800 g watermelon
- 1 red onion
- 2 stalks celery
- 2 blood oranges
- 1 sprig tarragon
- 2 tbsp olive oil
- 2 tbsp lemon juice
- salt
- pepper
Instructions
- 1. Remove the skin from the trout fillets.
- 2. Shred the trout meat into small pieces.
- 3. Peel the watermelon.
- 4. Cut the melon into bite-sized cubes.
- 5. Peel the onion.
- 6. Slice the onion into thin rings.
- 7. Wash the celery thoroughly.
- 8. Remove the tough fibers and ends from the celery.
- 9. Slice the celery into thin rounds.
- 10. Set aside the green celery leaves for later.
- 11. Peel the blood oranges.
- 12. Make sure to remove all the white pith.
- 13. Carefully cut out the fruit segments between the membranes.
- 14. Catch the dripping orange juice in a bowl.
- 15. Chop the orange fillets into small pieces.
- 16. Wash the tarragon.
- 17. Shake the herb dry.
- 18. Pluck the tarragon leaves from the stems.
- 19. Roughly chop the tarragon leaves.
- 20. Roughly chop the saved celery greens as well.
- 21. Whisk the collected orange juice with the olive oil.
- 22. Add the lemon juice to the dressing mixture.
- 23. Stir in the chopped celery greens and tarragon.
- 24. Season the dressing with salt.
- 25. Season the dressing with black pepper.
- 26. Add the shredded trout pieces to the bowl.
- 27. Add the melon cubes.
- 28. Add the orange pieces.
- 29. Add the onion rings.
- 30. Add the celery pieces.
- 31. Gently mix all ingredients together.
- 32. Taste the salad one last time and adjust seasoning if needed.
- 33. Divide the salad among the plates.
