🍽️ Melon and Shrimp Salad

Ingredients
- 0.25 watermelon (not too big with few seeds)
- 1 small Galia melon
- 600 g shrimp (kitchen-ready, peeled, deveined)
- 2 tbsp sunflower oil
- 50 ml vegetable broth
- 1 bunch mint
- 2 tbsp lemon juice
- 4 tbsp white balsamic vinegar
- salt
- pepper
Instructions
- 1. Cut the Galia melon in half, remove the seeds, and use a melon baller to scoop out small balls. Do the same with the watermelon.
- 2. Wash the mint. Set aside 4 to 6 small sprigs and pluck the leaves from the rest of the stems.
- 3. Heat the fat in a pan and add the shrimp. Sauté them briefly. Pour in the broth, add the mint leaves, season with salt and pepper, and let simmer for about 5 to 8 minutes over medium heat. Finally, add the lemon juice.
- 4. Remove the mint leaves from the pan and mix them with the melon balls. Season with vinegar and fill the mixture into the cups. Garnish with the reserved mint sprigs and serve immediately.
