  1. 1. Carefully cut the melon in half.
  2. 2. Remove the seeds using a teaspoon.
  3. 3. Use a melon baller to scoop out small balls of fruit flesh.
  4. 4. Place the melon balls into a bowl.
  5. 5. Set the bowl aside to keep the melons cool.
  6. 6. Toast the sliced almonds in a pan without adding any fat.
  7. 7. Cook the almonds until they turn light brown.
  8. 8. Allow the toasted almonds to cool down completely.
  9. 9. Wash the fresh coriander under running water.
  10. 10. Shake the coriander dry.
  11. 11. Pluck the small leaves off the stems.
  12. 12. Put the coriander leaves and the cooled almonds into a tall container.
  13. 13. Blend the mixture finely using a hand blender.
  14. 14. Cut the lime in half.
  15. 15. Squeeze the juice out of the lime.
  16. 16. Take two tablespoons of lime juice.
  17. 17. Stir the lime juice and honey into the coriander-almond puree.
  18. 18. Place the melon balls on top of the cream cheese.
  19. 19. Drizzle some of the coriander dip over the salad.
  20. 20. Serve the remaining dip separately in a small bowl.
