🍳 Sweet Melon Jam

Ingredients
- 1 kg small melon (e.g. Galia, 1 small melon)
- 300 g jam sugar (2:1)
- 2 limes (1 of them in organic quality)
Instructions
- 1. Rinse two screw-top jars (each with a capacity of 400 milliliters) with boiling water.
- 2. Place the jars upside down on a kitchen towel and let them dry.
- 3. Cut the melon in half.
- 4. Remove the seeds using a tablespoon.
- 5. Quarter the melon and peel it.
- 6. Weigh out 500 grams of fruit flesh.
- 7. Dice the fruit flesh into small cubes.
- 8. Place the melon cubes in a pot.
- 9. Stir the cubes together with the jam sugar.
- 10. Cover the pot.
- 11. Let the mixture steep for 20 minutes.
- 12. Rinse the limes under hot water.
- 13. Dry the limes.
- 14. Finely grate the peel of the organic lime.
- 15. Halve both limes.
- 16. Squeeze the juice from the limes.
- 17. Add the lime juice to the melon mixture.
- 18. Add the grated lime peel to the melon mixture.
- 19. Place the pot on the stove.
- 20. Bring the mixture to a boil.
- 21. Let the jam bubble and cook over high heat.
- 22. Stir constantly while doing so.
- 23. Cook the jam for 5 to 7 minutes.
- 24. Place a few drops of the liquid onto a small plate.
- 25. Check if the mixture starts to set after a few seconds.
- 26. If it sets, the jam is ready to be bottled.
- 27. If it is still liquid, cook it for another 1 to 2 minutes.
- 28. Repeat the setting test.
- 29. Fill the hot liquid into the jars using a small ladle.
- 30. Seal the jars immediately.
- 31. Place the jars upside down on a damp kitchen towel.
- 32. Then place the jars upright again.
