🍽️ Refreshing Melon Cold Soup with Shrimp Skewers

Ingredients
- 4 Shrimp (kitchen-ready)
- 2 tbsp olive oil
- salt
- pepper (from the mill)
- 250 g honeydew melon flesh
- 400 g watermelon flesh
- 8 leaves Thai basil
- 1 fresh garlic clove
- 2 cm fresh ginger
- 2 handfuls ice cubes
- 200 ml vegetable broth
- chili flakes
- 1 tbsp lime juice
Instructions
- 1. Rinse the shrimp under cold water and pat them dry with a kitchen towel.
- 2. Heat one tablespoon of oil in a frying pan.
- 3. Fry the shrimp in it for one to two minutes until golden brown.
- 4. Season the shrimp with salt and pepper.
- 5. Remove the pan from the heat and set the shrimp aside.
- 6. Cut out four small balls from the melon flesh.
- 7. Thread the melon balls, fresh Thai basil leaves, and the fried shrimp alternately onto wooden skewers.
- 8. Cut the remaining melon into coarse chunks.
- 9. Peel one clove of garlic and a piece of ginger.
- 10. Put the melon chunks, the garlic clove, the ginger, ice cubes, the broth, the remaining oil, salt, chili, and lime juice into a blender.
- 11. Blend the ingredients until smooth.
- 12. Add a little water if necessary to achieve the desired consistency.
- 13. Season the soup with salt and chili to taste.
- 14. Fill the cold soup into glasses.
- 15. Sprinkle some fresh pepper over it.
- 16. Garnish the glasses with the prepared skewers and serve the soup.
