  2. 2. Peel three of the melon halves and cut the flesh into small cubes.
  3. 3. Puree the cubed melon until smooth.
  4. 4. Use a melon baller to scoop out small balls from the remaining melon half.
  5. 5. Store the melon balls in a covered container in the refrigerator.
  6. 6. Peel the shallot and chop it finely.
  7. 7. Heat butter in a pot and sauté the shallots until translucent.
  8. 8. Deglaze the shallots with the broth and bring the mixture to a boil.
  9. 9. Simmer the broth over low heat for about three minutes.
  10. 10. Stir the melon puree into the hot broth.
  11. 11. Season the soup with salt, pepper, and lemon juice to taste.
  12. 12. Place the soup in a covered container and let it cool completely in the refrigerator.
  13. 13. Thread the cold melon balls onto toothpicks or small forks.
  14. 14. Garnish the cold soup with the melon balls on the skewers.
