  1. 1. Remove the seeds from both types of melons.
  2. 2. Use a melon baller to scoop out some nice balls of flesh and set them aside to keep cool.
  3. 3. Carefully separate the remaining flesh from the rind.
  4. 4. Cut the separated flesh into small cubes.
  5. 5. Place the cubes into a blender along with lemon juice, peach juice, and honey.
  6. 6. Blend the mixture until it becomes a smooth liquid.
  7. 7. Scrape out the seeds from the vanilla pod and stir them into the melon liquid.
  8. 8. Gently fold the melon balls you set aside earlier into the soup.
  9. 9. Place the soup in the refrigerator for 30 minutes to chill thoroughly.
  10. 10. Serve the cold soup garnished with fresh lemon balm leaves.
