🍽️ Refreshing Melon Jelly

Ingredients
- 500 g watermelon
- 80 g sugar
- 3 tbsp lemon juice
- Gelatin (6 sheets white and 1 sheet red)
- Sherry or apple juice
- Mint (for garnishing)
Instructions
- 1. Cut the melon open and remove the flesh.
- 2. Place the fruit flesh into a bowl.
- 3. Sprinkle the sugar over the fruit.
- 4. Pour the lemon juice over it.
- 5. Let the mixture sit for about 1 hour.
- 6. Soak the gelatin sheet in a bowl of cold water.
- 7. Puree the marinated fruit with a blender.
- 8. Strain the puree through a fine sieve to remove coarse fibers.
- 9. Add sherry or apple juice until you have a total of 1/2 liter of liquid.
- 10. Rinse a pudding mold briefly with cold water.
- 11. Take a small amount of the fruit mixture and heat it slightly.
- 12. Squeeze the soaked gelatin well.
- 13. Dissolve the gelatin in the warm liquid while stirring.
- 14. Add the dissolved gelatin to the rest of the fruit.
- 15. Place the bowl over a cold water bath.
- 16. Stir the mixture constantly until it thickens slightly and begins to set.
- 17. Pour the mixture into the prepared mold.
- 18. Place the mold in the refrigerator.
- 19. Let the jelly set there until it is firm.
- 20. Dip the mold briefly in warm water before serving the jelly.
- 21. Invert the jelly onto a plate.
- 22. Garnish it with fresh mint leaves.
