  1. 1. Cut the melon flesh off and put it into a bowl.
  2. 2. Add the sugar and the lemon juice and stir everything well.
  3. 3. Let the mixture stand for about one hour so that the flavors infuse well into the fruit.
  4. 4. Put the gelatin sheet into a bowl with cold water so that it becomes soft.
  5. 5. Puree the marinated melon finely until a smooth mass is formed.
  6. 6. Press the puree mixture through a fine sieve to remove all fibers and residue.
  7. 7. Add sherry or apple juice until you have exactly half a liter of liquid in total.
  8. 8. Rinse the pudding mold briefly with cold water.
  9. 9. Take the gelatin sheet out of the water and squeeze it well so that no water remains in it.
  10. 10. Take a small part of the fruit mixture and dissolve the gelatin in it while stirring constantly.
  11. 11. Add the rest of the fruit mixture and mix everything thoroughly together.
  12. 12. Pour the jelly mixture into the prepared molds.
  13. 13. Place the molds in the refrigerator.
  14. 14. Leave the jelly in the refrigerator until it is firm.
  15. 15. Place the mold briefly in a container with warm water to release the jelly from the edge.
  16. 16. Carefully turn the jelly out onto a plate.
  17. 17. Serve the jelly together with ham.
