- 80 g sugar
- 3 tbsp lemon juice

- sherry or apple juice
- 150 g Parma ham (in thin slices)
- 4 serving molds
Instructions
- 1. Cut the melon flesh off and put it into a bowl.
- 2. Add the sugar and the lemon juice and stir everything well.
- 3. Let the mixture stand for about one hour so that the flavors infuse well into the fruit.
- 4. Put the gelatin sheet into a bowl with cold water so that it becomes soft.
- 5. Puree the marinated melon finely until a smooth mass is formed.
- 6. Press the puree mixture through a fine sieve to remove all fibers and residue.
- 7. Add sherry or apple juice until you have exactly half a liter of liquid in total.
- 8. Rinse the pudding mold briefly with cold water.
- 9. Take the gelatin sheet out of the water and squeeze it well so that no water remains in it.
- 10. Take a small part of the fruit mixture and dissolve the gelatin in it while stirring constantly.
- 11. Add the rest of the fruit mixture and mix everything thoroughly together.
- 12. Pour the jelly mixture into the prepared molds.
- 13. Place the molds in the refrigerator.
- 14. Leave the jelly in the refrigerator until it is firm.

- 16. Carefully turn the jelly out onto a plate.
- 17. Serve the jelly together with ham.
