  1. 1. Cut the melon into four equal quarters using a large knife.
  2. 2. Cut each quarter in half again.
  3. 3. Carefully remove the large seeds using a toothpick.
  4. 4. Use a small knife to cut the flesh away from the rind.
  5. 5. Aim to get slices that are about 2 cm thick.
  6. 6. Cut strips from the slices that are about 7 cm long.
  7. 7. Thread the melon sticks onto wooden skewers.
  8. 8. Wrap each stick individually in cling film.
  9. 9. Place the wrapped skewers in the freezer for 1 hour.
  10. 10. Pour grape and redcurrant juice into a saucepan.
  11. 11. Bring the juices to a boil.
  12. 12. Reduce the liquid until it reaches about 200 ml.
  13. 13. Soak the gelatin in cold water.
  14. 14. Squeeze the gelatin well to remove excess water.
  15. 15. Dissolve the gelatin in the warm juice mixture while stirring.
  16. 16. Chill the mixture until the gelatin starts to set.
  17. 17. Take the frozen melon sticks out of the freezer.
  18. 18. Dip half of each stick into the gelatin juice mixture.
  19. 19. Place the sticks back in the freezer.
  20. 20. Repeat the process once the coating starts to freeze.
  21. 21. Freeze the ice lollies for at least another 2 hours.
