🍰 Melon popsicle

Ingredients
- 800 g small watermelon (1 small watermelon)
- 400 ml red grape juice
- 100 ml blackcurrant juice
- 2 sheets red gelatin
Instructions
- 1. Cut the melon into four equal quarters using a large knife.
- 2. Cut each quarter in half again.
- 3. Carefully remove the large seeds using a toothpick.
- 4. Use a small knife to cut the flesh away from the rind.
- 5. Aim to get slices that are about 2 cm thick.
- 6. Cut strips from the slices that are about 7 cm long.
- 7. Thread the melon sticks onto wooden skewers.
- 8. Wrap each stick individually in cling film.
- 9. Place the wrapped skewers in the freezer for 1 hour.
- 10. Pour grape and redcurrant juice into a saucepan.
- 11. Bring the juices to a boil.
- 12. Reduce the liquid until it reaches about 200 ml.
- 13. Soak the gelatin in cold water.
- 14. Squeeze the gelatin well to remove excess water.
- 15. Dissolve the gelatin in the warm juice mixture while stirring.
- 16. Chill the mixture until the gelatin starts to set.
- 17. Take the frozen melon sticks out of the freezer.
- 18. Dip half of each stick into the gelatin juice mixture.
- 19. Place the sticks back in the freezer.
- 20. Repeat the process once the coating starts to freeze.
- 21. Freeze the ice lollies for at least another 2 hours.
