🥗 Melon and Onion Salad with Pine Nuts

Ingredients
- 300 g Cantaloupe melon (peeled and seeded)
- 300 g Honeydew melon (peeled and seeded)
- 1 red onion
- 2 tbsp pine nuts
- mint
- 1 tbsp white balsamic vinegar
- 1 tbsp lime juice
- 2 tbsp grape seed oil
- 0.5 tsp honey
- sea salt (ground)
Instructions
- 1. Put the honey into a small bowl.
- 2. Add the oil.
- 3. Add the lime juice.
- 4. Add the balsamic vinegar.
- 5. Whisk the ingredients well together.
- 6. Season the dressing with sea salt.
- 7. Cut the melons into small cubes.
- 8. Peel the onion.
- 9. Halve the onion.
- 10. Cut the onion halves into thin strips.
- 11. Put the melon cubes and onion strips into a large bowl.
- 12. Pour the dressing over the fruit and vegetables.
- 13. Mix everything well.
- 14. Add the pine nuts.
- 15. Add the mint.
- 16. Fold the pine nuts and mint into the salad.
- 17. Let the salad marinate for 10 minutes.
- 18. Taste the salad again.
- 19. Serve the salad.
