🍽️ Melon-Vanilla Jam

Ingredients
- 2 honeydew melons (1 kg flesh)
- 500 g jam sugar (2:1)
- 1 orange (untreated)
- 1 vanilla pod
- 4 jam jars (screw-top jars)
Instructions
- 1. Remove the core of the honeydew melons.
- 2. Peel the melons.
- 3. Cut the flesh into even cubes.
- 4. Place the melon cubes in a large pot.
- 5. Mix the melons thoroughly with the jam sugar.
- 6. Let the mixture sit for about 1 hour.
- 7. Peel the skin of half an orange in large pieces.
- 8. Make sure to remove the white pith.
- 9. Squeeze the juice of the whole orange.
- 10. Strain the orange juice through a tea strainer.
- 11. Lightly tap the vanilla pod.
- 12. Slice the vanilla pod lengthwise.
- 13. Rinse the screw-top jars in hot water.
- 14. Let the jars drip dry on a dish towel.
- 15. Add the orange peel to the melon mixture.
- 16. Pour in the orange juice.
- 17. Scrape the seeds from the vanilla pod and add them to the pot.
- 18. Add the empty vanilla pod to the pot as well.
- 19. Bring the mixture to a boil while stirring occasionally.
- 20. Skim off the foam that forms.
- 21. Continue cooking the mixture until the fruit is soft.
- 22. Check if the setting point is reached (according to the jam sugar instructions).
- 23. Remove the orange peel and the vanilla pod.
- 24. Puree the jam finely with an immersion blender.
- 25. Turn the screw-top jars upside down.
- 26. Fill the very hot jam into the jars using a metal measuring cup or ladle and a filling ring.
- 27. Clean the rims of the jars.
- 28. Seal the jars immediately.
- 29. Place the jars on their lids to create a vacuum.
- 30. Repeat this process until all the jam is bottled.
- 31. Turn the jars back over after about 5 minutes.
