  1. 1. Remove the core of the honeydew melons.
  2. 2. Peel the melons.
  3. 3. Cut the flesh into even cubes.
  4. 4. Place the melon cubes in a large pot.
  5. 5. Mix the melons thoroughly with the jam sugar.
  6. 6. Let the mixture sit for about 1 hour.
  7. 7. Peel the skin of half an orange in large pieces.
  8. 8. Make sure to remove the white pith.
  9. 9. Squeeze the juice of the whole orange.
  10. 10. Strain the orange juice through a tea strainer.
  11. 11. Lightly tap the vanilla pod.
  12. 12. Slice the vanilla pod lengthwise.
  13. 13. Rinse the screw-top jars in hot water.
  14. 14. Let the jars drip dry on a dish towel.
  15. 15. Add the orange peel to the melon mixture.
  16. 16. Pour in the orange juice.
  17. 17. Scrape the seeds from the vanilla pod and add them to the pot.
  18. 18. Add the empty vanilla pod to the pot as well.
  19. 19. Bring the mixture to a boil while stirring occasionally.
  20. 20. Skim off the foam that forms.
  21. 21. Continue cooking the mixture until the fruit is soft.
  22. 22. Check if the setting point is reached (according to the jam sugar instructions).
  23. 23. Remove the orange peel and the vanilla pod.
  24. 24. Puree the jam finely with an immersion blender.
  25. 25. Turn the screw-top jars upside down.
  26. 26. Fill the very hot jam into the jars using a metal measuring cup or ladle and a filling ring.
  27. 27. Clean the rims of the jars.
  28. 28. Seal the jars immediately.
  29. 29. Place the jars on their lids to create a vacuum.
  30. 30. Repeat this process until all the jam is bottled.
  31. 31. Turn the jars back over after about 5 minutes.
