🍽️ Refreshing Melon and Arugula Salad with Feta

Ingredients
- 1 watermelon (approx. 0,8 kg)
- 1 bunch arugula
- coriander (each 1/2 bunch)
- mint (each 1/2 bunch)
- 6 radishes
- 1 spring onion (in thin rings)
- 100 g feta (cubed)
- 5 tbsp olive oil
- 1 tbsp sesame oil
- 1 tbsp light soy sauce
- 2 limes (juice)
- 20 g ginger (finely chopped)
- chili (each 1 tbsp red, green and yellow, finely chopped)
- salt
- pepper (from the mill)
- sugar
Instructions
- 1. Peel the melon completely.
- 2. Remove all seeds from the flesh.
- 3. Cut the flesh into small cubes.
- 4. Pick the arugula and herb leaves off the stems.
- 5. Wash the leaves thoroughly under running water.
- 6. Shake the leaves dry to remove excess water.
- 7. Set the leaves aside.
- 8. Wash the radishes.
- 9. Slice the radishes into paper-thin rounds.
- 10. Put the arugula into a large bowl.
- 11. Put the herbs into the bowl.
- 12. Put the melon cubes into the bowl.
- 13. Put the radish slices into the bowl.
- 14. Put the spring onions into the bowl.
- 15. Put the feta into the bowl.
- 16. Mix all ingredients in the large bowl.
- 17. Take a small bowl.
- 18. Put the olive oil into the small bowl.
- 19. Put the sesame oil into the small bowl.
- 20. Put the soy sauce into the small bowl.
- 21. Put the lime juice into the small bowl.
- 22. Put the ginger into the small bowl.
- 23. Put the chili into the small bowl.
- 24. Mix the dressing ingredients in the small bowl.
- 25. Season the dressing with salt.
- 26. Season the dressing with pepper.
- 27. Add a pinch of sugar to the dressing.
- 28. Drizzle the salad with the dressing.
