  3. 3. Bring a large pot of water and plenty of salt to a boil.
  4. 4. Add the snow peas to the boiling water and cook for 1 to 2 minutes until they are tender-crisp.
  5. 5. Immediately rinse the snow peas under cold, running water for 30 seconds to stop the cooking process.
  6. 6. Let the snow peas drain well in a colander.
  7. 7. Cut the snow peas diagonally in half.
  8. 8. Cut the watermelon in half if necessary.
  9. 9. Cut the watermelon into thick wedges.
  10. 10. Remove the green rind and seeds from the watermelon wedges.
  11. 11. Roughly cube the red flesh of the watermelon.
  12. 12. Wash the head of lettuce thoroughly.
  13. 13. Spin the head of lettuce dry to remove excess water.
  14. 14. Tear the head of lettuce leaves into bite-sized pieces.
  15. 15. Gently wash the strawberries in a bowl under running water.
  16. 16. Pat the strawberries dry with a kitchen towel.
  17. 17. Remove the green calyx leaves from the strawberries.
  18. 18. Cut the strawberries into small cubes.
  19. 19. Wash the chives and chervil.
  20. 20. Shake the herbs dry to remove water.
  21. 21. Cut the chives into fine rings.
  22. 22. Pluck the leaves from the chervil.
  23. 23. Cut the lemon in half.
  24. 24. Squeeze the juice from the lemon halves.
  25. 25. Drain the mozzarella.
  26. 26. Cut the mozzarella into small cubes.
  27. 27. Add the lemon juice, honey, salt, and pepper to a large bowl.
  28. 28. Add the olive oil to the bowl.
  29. 29. Whisk the ingredients vigorously until a uniform dressing sauce has formed.
