🥗 Fresh Summer Salad with Watermelon and Mozzarella

Ingredients
- 100 g snow peas
- salt
- 1 kg watermelon (1 piece; with rind)
- 1 head lettuce
- 150 g strawberries (or other berries)
- 1 bunch chives
- 8 sprigs chervil
- 1 lemon
- 250 g mozzarella
- 1 tbsp honey
- pepper
- 4 tbsp olive oil
- 4 slices whole wheat toast
Instructions
- 1. Thoroughly wash the snow peas under running water.
- 2. Remove the stringy fibers from the ends of the snow peas if present.
- 3. Bring a large pot of water and plenty of salt to a boil.
- 4. Add the snow peas to the boiling water and cook for 1 to 2 minutes until they are tender-crisp.
- 5. Immediately rinse the snow peas under cold, running water for 30 seconds to stop the cooking process.
- 6. Let the snow peas drain well in a colander.
- 7. Cut the snow peas diagonally in half.
- 8. Cut the watermelon in half if necessary.
- 9. Cut the watermelon into thick wedges.
- 10. Remove the green rind and seeds from the watermelon wedges.
- 11. Roughly cube the red flesh of the watermelon.
- 12. Wash the head of lettuce thoroughly.
- 13. Spin the head of lettuce dry to remove excess water.
- 14. Tear the head of lettuce leaves into bite-sized pieces.
- 15. Gently wash the strawberries in a bowl under running water.
- 16. Pat the strawberries dry with a kitchen towel.
- 17. Remove the green calyx leaves from the strawberries.
- 18. Cut the strawberries into small cubes.
- 19. Wash the chives and chervil.
- 20. Shake the herbs dry to remove water.
- 21. Cut the chives into fine rings.
- 22. Pluck the leaves from the chervil.
- 23. Cut the lemon in half.
- 24. Squeeze the juice from the lemon halves.
- 25. Drain the mozzarella.
- 26. Cut the mozzarella into small cubes.
- 27. Add the lemon juice, honey, salt, and pepper to a large bowl.
- 28. Add the olive oil to the bowl.
- 29. Whisk the ingredients vigorously until a uniform dressing sauce has formed.
- 30. Add the cubed strawberries and chives to the dressing.
- 31. Let the mixture sit for 10 minutes to allow the flavors to meld.
- 32. Toast the bread slices in a toaster or in a pan.
- 33. Cut the toasted bread into cubes of about 5 millimeters in size.
- 34. Add the snow peas to the bowl with the dressing.
- 35. Add the watermelon cubes to the bowl.
- 36. Add the mozzarella cubes to the bowl.
- 37. Add the chervil leaves to the bowl.
- 38. Add the head of lettuce pieces to the bowl.
- 39. Gently fold all ingredients together to mix them.
- 40. Sprinkle the bread cubes over the finished salad.
- 41. Serve the salad immediately to keep the bread cubes crispy.
