🍽️ Fresh Melon Jam with Lemon Balm

Ingredients
- 3 honeydew melons
- 2.5 kg jam sugar (1:1, according to fruit and juice amount)
- 250 ml sherry
- 2 lemons (juice)
- 2 tsp lemon zest
- 0.5 bunch lemon balm leaves
Instructions
- 1. Cut the melons in half.
- 2. Remove the seeds and the fibrous part from the inside.
- 3. Cut the melon halves into wedges.
- 4. Carefully separate the flesh from the green rind.
- 5. Dice the fruit into cubes of about 3 cm.
- 6. Place the melon cubes into a large bowl.
- 7. Mix the cubes with 1 kg of jam sugar.
- 8. Pour in the sherry.
- 9. Cover the bowl.
- 10. Let the mixture sit overnight.
- 11. Squeeze the juice of one lemon.
- 12. Finely grate the zest of one lemon.
- 13. Add the lemon juice and zest to the melon mixture.
- 14. Weigh the melon cubes together with the resulting liquid.
- 15. Add more jam sugar until the total weight matches the fruit weight.
- 16. Bring the mixture to a boil on the stove.
- 17. Let the jam simmer vigorously for about 5 minutes.
- 18. Wash the fresh lemon balm leaves under cold water.
- 19. Pat the leaves dry with a kitchen towel.
- 20. Stir the dried leaves into the hot jam.
- 21. Fill the hot jam immediately into clean, hot jars.
- 22. Seal the jars immediately with lids.
- 23. Turn the sealed jars over several times while they cool.
