  1. 1. Peel the melon and cut it in half.
  2. 2. Remove the seeds from the melon.
  3. 3. Cut the melon flesh into thin strips.
  4. 4. Peel the onions.
  5. 5. Cut the onions into fine strips as well.
  6. 6. Slice the mozzarella.
  7. 7. Halve the avocados and remove the pits.
  8. 8. Scoop out the avocado flesh whole with a spoon.
  9. 9. Cut the avocado flesh into thin wedges.
  10. 10. Gently mix all the prepared ingredients together.
  11. 11. Divide the mixture into small bowls.
  12. 12. Drizzle lemon juice over the salad.
  13. 13. Add a little honey.
  14. 14. Drizzle olive oil over it.
  15. 15. Season the salad with pepper.
  16. 16. Garnish the salad with fresh coriander leaves.
