  1. 1. Cut the melon in half crosswise.
  2. 2. Remove the seeds from the halves.
  3. 3. Carefully scoop the flesh out of the rind with a spoon.
  4. 4. Dice the deseeded flesh into bite-sized pieces.
  5. 5. Mix the melon pieces with the spinach in a bowl.
  6. 6. Season the mixture with salt and pepper to taste.
  7. 7. Fill the empty melon rind with the melon-spinach mixture.
  8. 8. Drizzle lemon juice over the filled melon.
  9. 9. Add a little olive oil.
  10. 10. Place slices of Parma ham on top of the filling.
  11. 11. Sprinkle the dish with Parmesan shavings.
