🍽️ Fresh Melon Mozzarella Salad

Ingredients
- 1 smaller watermelon
- 0.5 honeydew melon
- 300 g small mini mozzarella balls (from buffalo milk)
- 1 handful basil (with flowers)
- 0.5 lemon (juice)
- 3 tbsp grape seed oil
- salt
- cayenne pepper (freshly ground)
- 1 tsp honey
Instructions
- 1. Cut two large wedges from the watermelon.
- 2. Scrape the red flesh off the rinds.
- 3. Remove as many seeds as possible.
- 4. Use a melon baller to form small balls from the flesh.
- 5. Use the remaining flesh for another purpose.
- 6. Repeat the process with the honeydew melon to create balls as well.
- 7. Mix the melon balls with the well-drained mozzarella.
- 8. Rinse the basil under cold water.
- 9. Set aside a few nice leaves and flowers for decoration.
- 10. Cut the remaining basil into thin strips.
- 11. Whisk together the lemon juice, oil, a pinch of salt, cayenne pepper, and honey to make a dressing.
- 12. Mix this dressing with the melon and mozzarella mixture.
- 13. Fold in the thin basil strips.
- 14. Season the mixture with salt and pepper to taste.
- 15. Fill it into the hollowed-out melon shell.
- 16. Serve the salad garnished with the reserved basil leaves and flowers.
