🍰 Fresh Lemon Balm Sorbet

Ingredients
- 0.5 vanilla pod
- 1 lime
- 1 bunch lemon balm
- 50 g coconut blossom sugar (2.5 tbsp)
- 150 ml light grape juice (vegan)
- 400 g strawberries
Instructions
- 1. Slice the half vanilla pod lengthwise.
- 2. Scrape out the seeds with the back of a knife.
- 3. Rinse the lime under hot water.
- 4. Dry the lime and cut it in half.
- 5. Slice one of the lime halves into thin rounds.
- 6. Wash the lemon balm thoroughly.
- 7. Shake the leaves dry.
- 8. Set aside 1 to 2 stems for garnish.
- 9. Place the remaining lemon balm into a bowl.
- 10. Add the vanilla pod, seeds, lime slices, coconut blossom sugar, grape juice, and 450 milliliters of water to a pot.
- 11. Bring the mixture to a boil while stirring.
- 12. Continue stirring until the coconut blossom sugar is completely dissolved.
- 13. Pour the hot sugar solution directly over the lemon balm.
- 14. Let the mixture steep for 10 to 15 minutes.
- 15. Strain the liquid through a fine mesh sieve.
- 16. Pour the strained liquid into a shallow baking dish.
- 17. Place the dish in the freezer.
- 18. Wait until the liquid starts to freeze at the edges.
- 19. Blend the mixture thoroughly with a hand blender.
- 20. Repeat the stirring process frequently during the entire 6-hour freezing time.
- 21. The more often you stir, the finer the texture will be.
- 22. Finely grate the zest of the remaining lime.
- 23. Squeeze the juice from the lime.
- 24. Place the zest and juice into a separate bowl.
- 25. Gently wash the strawberries.
- 26. Pat the strawberries dry.
- 27. Remove the stems from the strawberries.
- 28. Slice the strawberries.
- 29. Mix the strawberry slices with the lime zest and juice.
- 30. Let the strawberries marinate in the refrigerator for a short time.
- 31. Scoop balls from the finished sorbet using a tablespoon.
- 32. Plate the sorbet with the marinated strawberries.
- 33. Garnish the dish with the reserved lemon balm stems.
- 34. Serve the sorbet immediately.
