  1. 1. Slice the half vanilla pod lengthwise.
  2. 2. Scrape out the seeds with the back of a knife.
  3. 3. Rinse the lime under hot water.
  4. 4. Dry the lime and cut it in half.
  5. 5. Slice one of the lime halves into thin rounds.
  6. 6. Wash the lemon balm thoroughly.
  7. 7. Shake the leaves dry.
  8. 8. Set aside 1 to 2 stems for garnish.
  9. 9. Place the remaining lemon balm into a bowl.
  10. 10. Add the vanilla pod, seeds, lime slices, coconut blossom sugar, grape juice, and 450 milliliters of water to a pot.
  11. 11. Bring the mixture to a boil while stirring.
  12. 12. Continue stirring until the coconut blossom sugar is completely dissolved.
  13. 13. Pour the hot sugar solution directly over the lemon balm.
  14. 14. Let the mixture steep for 10 to 15 minutes.
  15. 15. Strain the liquid through a fine mesh sieve.
  16. 16. Pour the strained liquid into a shallow baking dish.
  17. 17. Place the dish in the freezer.
  18. 18. Wait until the liquid starts to freeze at the edges.
  19. 19. Blend the mixture thoroughly with a hand blender.
  20. 20. Repeat the stirring process frequently during the entire 6-hour freezing time.
  21. 21. The more often you stir, the finer the texture will be.
  22. 22. Finely grate the zest of the remaining lime.
  23. 23. Squeeze the juice from the lime.
  24. 24. Place the zest and juice into a separate bowl.
  25. 25. Gently wash the strawberries.
  26. 26. Pat the strawberries dry.
  27. 27. Remove the stems from the strawberries.
  28. 28. Slice the strawberries.
  29. 29. Mix the strawberry slices with the lime zest and juice.
  30. 30. Let the strawberries marinate in the refrigerator for a short time.
  31. 31. Scoop balls from the finished sorbet using a tablespoon.
  32. 32. Plate the sorbet with the marinated strawberries.
  33. 33. Garnish the dish with the reserved lemon balm stems.
  34. 34. Serve the sorbet immediately.
